Open-Face Summer Sandwiches

Open-face tomato sandwiches were always a childhood favorite of mine. I wouldn't call it traditional German food but in my family, we like this kind of sandwich a lot. In the summer especially, I like to put all kinds of vegetables and fruits on German bread: radishes, cucumber, chopped herbs, apple, pear, banana,.... It's a healthy, fresh, and filling lunch snack.


Avocado & Cream Cheese Sandwich

Ingredients (for 1 sandwich):
1 slice dark German bread (e.g. pumpernickel, sunflower seed bread, whole grain rye bread)
light cream cheese
1/2 avocado, sliced
1-2 tsp lime juice
salt
freshly ground black pepper
1-2 tbsp tomato dice
1 tbsp scallion slices

Spread cream cheese onto the bread. Top with avocado slices. Drizzle with lime juice and season with salt & pepper. Top with tomato and scallion.


Tomato Pesto Sandwich

Ingredients (for 1 sandwich):
1 slice dark German bread (e.g. pumpernickel, sunflower seed bread, whole grain rye bread)
1 tbsp (or to taste) pesto
1 tomato, sliced
freshly ground black pepper
salt
1-2 tbsp sliced scallion (or thinly sliced onion rings)

Spread pesto onto the bread. Top with tomato slices. Season to taste with pepper & salt. Sprinkle with scallion or onion.
