Australia: Pocket Steak Melbourne


2 steaks of choice (225 g each)
4 tbsp butter
2 tbsp finely chopped onion
125 g sliced (or coarsely chopped) mushrooms
salt and pepper
1 clove garlic, crushed
cayenne pepper

Cut a pocket in each steak. Heat the butter over medium heat, add onion and mushrooms and cook until the onion is soft, about 5-7 minutes. Season with salt and pepper. Drain and collect the excess butter from the skillet. Fill each pocket with the mushroom mix and close with a toothpick. Mix the butter with garlic, cayenne pepper and salt. Brush steak (both sides) with garlic butter, then season with salt and pepper. Grill in a sandwich grill or under the broiler to desired doneness. I served the steaks with Swedish Cabbage and Apple Salad.
