Australia: Rum Fudge Balls (or "Aussie-German Rumkugeln")

I have always loved Rumkugeln (rum truffles or rum fudge balls) that you can find in most bakeries in Northern Germany. (They are also popular in Denmark, as I discovered during a trip to Copenhagen several years ago.) Over time, I have tried several different recipes for versions of rum fudge balls but never quite got them the way I wanted. I hadn't expected to find a recipe in an Australian cookbook but I was more than ready to give it a try. They turned out great! Another successful enterprise to "recreate" some German food that I crave and can't find around here. I did make one big change to the original recipe: I omitted the coconut. Coconut was supposed to into the fudge mix and also used to cover the balls on the outside. But as I am not too crazy about coconut, I simply left it out. Also, the ratio of condensed milk to cookies seemed to be way of in the original recipe; I about doubled the amount of cookies and halved the amount of condensed milk. The mix should not be too soft or it won't hold it's shape.

Spinach Salad with Warm Bacon Dressing

It's SRC (Secret Recipe Club) time again. This month, I was assigned the blog Fallon's Cucina, written by (can you guess?) Fallon. I had a hard time choosing a recipe from among all the delicious salads on her blog. I finally settled on Spinach Salad with Warm Bacon Dressing, a recipe that Fallon had adapted from another blog. I went back to look at the original posting before settling on how to prepare the salad. I don't want to cause confusion by mention the changes that either one of us made to the original recipe. Let me just point out the two major changes I made. 1) The recipe called for mushrooms and as neither me nor HubbyGrouch are crazy about them, I used zucchini instead. 2) I didn't have enough shrimps, so I used some salmon as well. We enjoyed this salad on a hot day. The combination of salmon and bacon was very tasty!

Aliño Criollo Seasoned Chicken Breast and Tostones

HubbyGrouch often asks me to include more plantain in our meal plan. So today he finally got what he wanted. You can find the recipe for tostones/patacones (fried plantain) here. I used two plantains and cut each diagonally at a very high angle into 4-5 pieces. The recipe for the chicken is here. This time, I used chicken tenders, pounded to about 3 mm thick.

Family Recipe: Lettuce with Lemon Juice

This is one of the simplest (maybe THE simplest) salad imaginable. It only has three ingredients! When I was a kid, we often had this salad as a side during the summer. My mother would usually use Boston lettuce, but any lettuce works fine.

Open-Face Summer Sandwiches

Open-face tomato sandwiches were always a childhood favorite of mine. I wouldn't call it traditional German food but in my family, we like this kind of sandwich a lot. In the summer especially, I like to put all kinds of vegetables and fruits on German bread: radishes, cucumber, chopped herbs, apple, pear, banana,.... It's a healthy, fresh, and filling lunch snack.

Australia: Aussie Burger

Several cookbooks mentioned the coloring effect of beet juice on the Aussie burgers. I don't like beets anyway and the image of violet beet juice seeping all over the place didn't make them any more appealing. I was very tempted to leave the beets out completely. However, I am trying to do my best to cook authentic food here (no need to mention the general difficulties arising from that), so I just had to include the beets. As a compromise and in an effort to prevent my burgers from being stained purple, I decided to "trap" the beets inside the meat patties. It is not difficult to do and worked out pretty well. I did not put huge amounts of beet and so the taste was not very noticeable. If you are a beet lover, by all means load your burger with the stuff (or put several layers of beet slices in the patty).

Cook Around the Globe - June 2012 Roundup


Welcome to the roundup of my exploration of the cuisines of Slovenia, Croatia, Serbia, Kosovo, Bosnia and Herzegovina, Montenegro, Macedonia, and Albania. As always, I have greatly enjoyed this month's cuisines, I discovered several recipes that will make it on our menu again, and there are several more dishes that I didn't have the time to try (they are on my list for next time). My favorite dish were the Raznjici (Serbian Meat Skewers). Runners-up were Albanian-Style Eggplant and Macedonian Poached Eggs in Spinach with Yogurt. (Most of the recipes are not online - yet. If you are interested in a particular recipe, please let me know and I will type it up.)
