Croatia: Adriatic Tuna with Tomato Sauce

Couscous Salad with Chickpeas and Herbs

Ingredients (for 8 servings):
2 cups couscous
grated zest of 1 lemon
4 plum tomatoes
2   15.5-oz cans chickpeas
1 small red onion
20 g fresh parsley, minced
20 g fresh mint, minced
20 g fresh cilantro, minced
6 tbsp lemon juice
salt
freshly ground black pepper
2-3 tbsp olive oil
