Chinese Egg Fried Rice


Ingredients:
2 1/2 cups cooked rice
1 cup cooked peas
2 tbsp soy sauce
3-5 scallions, thinly sliced
2 large eggs
salt
pepper
oil

Beat eggs with a little salt. Heat a little oil over medium heat. Add eggs and let set, breaking eggs up with a spoon. Remove to a plate. Mix rice with soy sauce. Heat 1-2 tsp oil over medium-high heat. Add scallions and cook 1 minute. Add peas, rice, pepper, and salt. Stir-fry for 2-3 minutes until heated through. Add egg and heat through. Serve as a vegetarian main dish or as a side.
