Colombia: Patacones/Tostones (Fried Green Plantain)

   
Ingredients (for 7-8 tostones):
1 large green plantain, peeled and cut diagonally into 1 1/2 inch slices
salt
mozzarella cheese, optional
oil for deep frying

Pour 2-3 inches of vegetable oil in a deep fryer or saucepan. Heat to 325F. Working in batches, fry the plantain slices for 5 minutes. Drain on paper towels. Place a plantain slice between two layers of wax paper and press (using your palm or a plate) to about 1/2" to 3/4" thick. Repeat with the remaining slices. Increase the oil temperature to 375F. Working in batches, fry the plantain slices until they are crisp and brown, about 1-2 minutes. Sprinkle lightly with salt and serve with cheese if desired. (We like to make little "sandwiches" with a slice of cheese between two tostones.)
