Guyana / French Guiana: Massala viesie (Curried Fish)

2 cod fillets (or halibut or snapper)
1-2 tbsp oil
1 onion, chopped
2 cloves garlic, minced
1 medium plum tomato, seeded and chopped
1 green cubanelle pepper (or small green bell pepper), cut into pieces
1-3 tsp curry powder
1 cup water

Season the fish with salt. Heat the oil over medium-high heat and brown the fish on both sides. Remove from skillet. Add the onion and garlic to the pan (and a little oil if needed) and cook until translucent, about 5 minutes.  Add tomato, green pepper, and curry powder and cook for another 5 minutes. Add the water and return the fish to the pan. Cover and simmer for 15 minutes until the fish is done and the sauce is slightly thickened.
