Zimbabwe: Nyama Ne Nyemba (Steak and Bean Stew)

3 medium onions, halved lengthwise and thinly sliced
1 tbsp vegetable oil
1 kg beef, diced
2 garlic cloves, crushed
3 tbsp curry powder
2 medium tomatoes, diced
1-2 tbsp tomato paste
salt and pepper
2   15-oz cans kidney beans, drained
juice of 1 lemon

Heat oil over medium-high heat. Add onion and cook until starting to brown. Add meat and brown on all sides. Add garlic and curry powder, cook, stirring, for 2-3 minutes. Add 1-2 cups of water, cover, and simmer for 1 hour. Add tomatoes and cook, uncovered, for 15 minutes. Add tomato paste and beans, season to taste with salt and pepper, and cook, covered for 15 minutes until beans are soft. (Depending on how thick you like the sauce of this stew, you can change the amount of water you add, as well as adjust the "uncovered" cooking times.) Drizzle with lemon juice and serve.
