Denmark: Rødkål med æbler (Braised Red Cabbage with Apples)

1 1/2 tbsp butter
1/2 red cabbage, cut into three wedges and thinly sliced
1-2 apples, peeled and finely diced
50 ml red wine vinegar
150 ml cranberry juice
juice and grated zest of 1/2 orange
1/4 tsp cinnamon

Melt butter over medium heat. Add cabbage and apple, and cook for 5-7 minutes, stirring now and then. Add vinegar, cranberry juice, orange zest and juice, and cinnamon. Simmer, covered, over low heat for 1 hour, stirring occasionally. Season to taste with salt and pepper.
