Denmark: Brændende kærlighed ("Burning Love" - Mashed Potatoes with Toppings)

I loved this dish. It is full of my favorite ingredients: potatoes, onion, bacon, eggs - yum! HubbyGrouch agreed, though he told me not to make again for one year, so that his cholesterol level has time to go down. It has a very interesting title, too. (A quick search didn't give any ideas how it got it's name - so I have to keep trying.) This recipe will be linked up to my "Cook Around the Globe" project.

750 g potatoes, peeled and cut into cubes
40 g unsalted butter
200-300 ml milk
250 g bacon, diced
3 onions, quartered lengthwise and thinly sliced
3 tbsp fresh snipped chives
4 eggs (optional)

Boil the potatoes until tender. Drain and mash. Mix in butter, milk, salt, pepper, chives, and nutmeg. In the meantime, fry bacon until crisp, drain on paper towels. Discard all put 2-3 tsp bacon fat. Add onion to bacon fat and cook until lightly browned and tender. Fry eggs if using. To serve, place mashed potatoes on plates, top with onions, egg, and bacon.
