This salad is very refreshing and a great "cooler" for spicy hot dishes. It is the Bhutanese equivalent to the better known Indian raitas ("curry coolers"). If you are not a great fan of raw onion, you can either reduce the amount or soften them in a little oil and then letting them cool before adding to the salad. 175 g (6 oz) seeded cucumber, chopped
1 medium red onion (about 110g), finely chopped
90 g (3 oz) crumbled farmer cheese (or Monterey Jack or Munster or queso fresco or queso blanco)
1 medium fresh green chili pepper, diced (optional)
Combine cucumber, onion, cheese, and chili. Season to taste with salt and pepper. Serve as a side with Pork Fing.
