Mongolia: Budaatai Khuurga (Stew with Rice, Vegetables and Meat)


150-200 g lamb meat, cut into strips
1 cup rice
2 medium onion, cut into strips
1-3 tsp vegetable oil
2-3 garlic cloves, minced
2 carrots, cut into strips
1 small green bell pepper, cut into strips
5-6 large leaves of green cabbage or Chinese cabbage, cut into strips
soy sauce

Prepare the rice as per instructions. Heat oil in a large skillet over medium heat. Add onion and cook until translucent, stirring frequently, about 5-7 minutes. Add carrots and bell pepper and cook, stirring frequently, until beginning to soften, about 5 minutes. Add the cabbage and meat and cook, stirring often, until the meat is cooked through. Season with salt, pepper, and a little soy sauce. Add the rice, mix well, and adjust seasoning.

  1. I'm not familiar with this dish, but it looks excellent and like a great way to use up the odds and ends of veggies in my fridge!
