Chicken Quesadillas

4-5 chicken tenders
ground cumin
black pepper
vegetable oil
6-8 tortillas (8 inch diameter): corn, flour, whole wheat or multigrain
taco sauce
2-3 cups grated Mexican cheese blend or cheese of your choice
6-8 scallions, thinly sliced
sour cream for serving (optional)

Season chicken with paprika, cumin, pepper, and salt. Heat 1 tsp oil over medium heat, add chicken and cook until cooked through, about 2-3 minutes per side. Remove to a plate and let cool. Slice crosswise into 1/4" thick slices. To prepare the quesadillas, spray a large enough skillet with vegetable oil and heat over medium-low heat. Spread 2-3 tbsp taco sauce on one tortilla. Transfer to skillet. Top with 1/4 of the sliced chicken, grated cheese, and scallions. Cover with another tortilla and spray with vegetable oil. Cook for 2-4 minutes per side, until tortillas are lightly browned and cheese is melted. Serve with sour cream if desired.
