Simple Tomato Sauce

When I deciding on the buffet for LittleGrouch's birthday party, I wanted to include a vegetarian option, of course. As most kids like pasta with tomato sauce, this seemed the best and easiest option. The sauce can be prepared 2-3 days in advance (and kept in the fridge), which conveniently distributes the work that needs to be done.

1 medium onion, minced
3 tbsp olive oil
2   14.5 ounce cans diced tomatoes
2   8 ounce cans tomato sauce
2 tbsp tomato paste
1 tbsp dried basil
1 tbsp dried oregano
1 tsp sugar

Heat oil over medium heat. Add onion and cook until translucent, 3-5 minutes. Add diced tomatoes, tomato sauce, tomato paste, basil, and oregano. Season with salt and pepper. Bring to a boil and simmer on very low for 1 hour, stirring from time to time, until sauce thickened. Season with sugar, salt, and pepper. Puree the sauce for a smooth texture.
