Chocolate Cake with Apple-Cream-Filling

For LittleGrouch's birthday cake this year, I decided to make some colored ornaments myself. I had bought some molds for tiny fruit chocolate fruits and colored chocolate melts. I just filled some small zip lock-style bags with chocolate and put them in warm-hot water to melt. Then I cut off one corner of the bag and squeezed the melted chocolate into the mold, being careful to get rid of any air bubbles. LittleGrouch loved those little ornaments and would have liked to eat them right away. He wanted a chocolate for his birthday and this one sounded pretty good - with the nice apple filling. As you can see in the picture below, he was very happy with his cake.



Ingredients:
4 eggs, separated
125 g sugar
75 g flour
75 g corn starch
20 g cocoa powder
1 envelope gelatine (for 250 ml liquid)
2 apples (Braeburn or Cortland), peeled and diced
250 ml apple cider
600 g heavy whipping cream
grated zest of 1 lemon
1 envelope vanilla sugar (or 1 tsp vanilla extract)
chocolate sprinkles and ornaments for decoration

Preheat oven to 400F. Line the bottom of a 10" springform with parchment paper. Whip egg whites until stiff, slowly adding the sugar. Fold in egg yolks. Sieve flour, starch, and cocoa onto egg whites and fold in gently. Pour into spring form and even out. Bake 15-20 minutes. Let cool. Place 50 ml cider in a small microwave save bowl. Sprinkle gelatine over; set aside. Bring remaining cider and apples to a boil. simmer for 3 minutes. Drain. Whip 300 g cream, adding lemon zest and vanilla sugar while whipping. Cut cake in half horizontally. Place springform ring around bottom half. Carefully heat gelatine on low in the microwave, until dissolved. (Do not boil!) Whisk 2-3 tbsp whipped cream into melted gelatine. Then pour gelatine mix and drained apples over remaining whipped cream and fold in gently. Spread onto bottom half of cake and cover with top. Chill until gelatine is set, about 2-3 hours. Remove springform ring. Whip remaining cream, spread all around and on top of cake. Decorate with ornaments, chocolate sprinkles or your choice.
