Baked Curried Eggplant with Chickpeas and Spinach

This is a family favorite vegetarian dinner. I have prepared this dish several times since it appeared in Food & Wine magazine 2 years ago. MissChubbyCheeks loved the chickpeas (after we had wiped off the curry).
