This is a recipe for all potato and bacon lovers. I have made this recipe before and today it was about time to repeat it. I am always trying to sneak potato dishes into our meal plan, and wrapping those little tubers in bacon seemed a really great way to do so. HubbyGrouch liked the dish and even LittleGrouch ate one potato.
7 medium white potatoes (about 175 g each)
14 thin slices bacon
dried crushed sage
2 garlic cloves, very thinly sliced
freshly ground black pepper
30 g unsalted butter
1 1/2 tbsp all-purpose flour
375 ml beef broth, hot
1-2 tsp dried crushed sage
3-4 tbsp lemon juice
150 g sour cream
Cook potatoes with skin until tender, about 30 minutes. Drain potatoes, rinse with cold water, and let cool. Peel potatoes and cut in half lengthwise. Preheat oven to 390F. Spread out bacon slices. Sprinkle with pepper, sage, and garlic. Place one potato half, cut side up, in the middle of each slice of bacon. Wrap bacon around potatoes and place seam side down into a 9"x13" oven dish. Bake for 20-25 minutes until bacon is crisp. In the meantime, prepare the sauce. Melt butter in a saucepan over medium-low heat. Add flour and, whisking constantly, cook for about 2-3 minutes. Stirring, add broth. Bring to a boil, add sage and lemon juice. Let boil for about 30 seconds, then season to taste with salt, pepper, and lemon juice. Whisk in sour cream. After 20 minutes, pour sauce over potatoes and bake for another 10-15 minutes. Serve hot with a side salad.
