Mixed Salad with Apple & Pear

After a hearty breakfast and a nice cake in the afternoon, I felt like having a light dinner. As it was a hot and humid day, I decided on a refreshing mixed salad. Probably the last one for this summer season.



Ingredients (6 servings):
1 Braeburn apple, cut into 1/4" by 1" inch strips
1 Anjou pear, cut into 1/4" by 1" inch strips
1-2 tbsp lemon juice
2/3 cucumber, quartered lengthwise, sliced
1 yellow bell pepper, cut into 1/4" by 1" inch strips
1 red bell pepper, cut into 1/4" by 1" inch strips
6 slices Provolone cheese, cut into 1/4" by 1" inch strips
6 slices ham, cut into 1/4" by 1" inch strips
1 bunch scallions, sliced
6 oz baby spinach
40-50 stuffed green olives
40-50 cherry tomatoes

Place spinach on dinner plates. Toss apple and pear with lemon juice. Add cucumber, both pepper, cheese, ham and scallions. Toss well. Place salad mix on plates and decorate with tomatoes and olives. Serve with your favorite crunchy bread and dressing.
