Classic Quesadillas with Tomato Salsa

Here is another one of those quick and simple, yet delicious meals for busy week nights. You can use any cheese you like, and if you long for a little bit of meat as well, just sprinkle some ham or prosciutto over the cheese. The salsa can be prepared in advance and kept in the fridge for better flavor development.

vegetable oil
8 whole wheat tortillas
1 pound (or more) grated cheddar or cheese of your choice
8-10 scallions, sliced
minced jalapeños (fresh or pickled)
ham or prosciutto (optional)

tomato salsa
4 ripe tomatoes, diced
1 small red onion, minced
minced jalapeño to taste
15 g fresh cilantro, minced
1-2 tbsp lime juice
salt & pepper to taste

For the salsa, mix all ingredients in a small bowl and set aside (or keep in the fridge for longer periods) until ready to serve. For the quesadillas, heat a skillet over medium-low heat. Divide the cheese, scallions and jalapeño (and meat if using) among 4 tortillas. Top with remaining tortillas. Spray skillet with vegetable oil, place quesadilla in skillet and cook until cheese is starting to melt, about 3 minutes. Carefully turn over quesadilla and cook for another 2-3 minutes until cheese is completely melted. Slide quesadilla onto a plate, cut into quarters, and top with tomato salsa. Repeat with remaining quesadillas and serve immediately.
