Zucchini Radish Julienne Salad

Well, it's zucchini season, so I'll probably be posting a few recipes with that vegetable. Today's zucchini salad was very easy to eat, with everything julienned. It was quite a bit of work but definitely worth the effort.

2 medium zucchini
6 medium radishes
10-12 yellow cherry tomatoes
1/2 Braeburn apple
75 g Provolone cheese
6-8 slices Black Forest prosciutto

2 tsp Dijon mustard
1 tbsp apple cider vinegar
2 tbsp olive oil
3 tbsp chopped parsley
2 tbsp snipped chives
salt and pepper

Cut all ingredients into 3 mm by 3 cm long strips and place in a bowl. Whisk together all ingredients for the vinaigrette and pour over the salad. Gently mix everything together. Serve on Boston lettuce or your favorite greens and with crusty bread.

  1. Yum! Looks good! Great for a hot day.

  2. What an amazing blend of summer flavors! Well done and thanks for sharing!

  3. Wow - that sounds delicious! I like the idea of apples and provolone in it!

  4. That would a great summery salad.

  5. Oh, I hate having to julienne a bunch of things, but looking at this salad, it would be worth it. Like you, I have plenty of zucchini so I'll have to give this a try.
