Zucchini Radish Julienne Salad

Well, it's zucchini season, so I'll probably be posting a few recipes with that vegetable. Today's zucchini salad was very easy to eat, with everything julienned. It was quite a bit of work but definitely worth the effort.




Ingredients:
2 medium zucchini
6 medium radishes
10-12 yellow cherry tomatoes
1/2 Braeburn apple
75 g Provolone cheese
6-8 slices Black Forest prosciutto

vinaigrette
2 tsp Dijon mustard
1 tbsp apple cider vinegar
2 tbsp olive oil
3 tbsp chopped parsley
2 tbsp snipped chives
salt and pepper

Cut all ingredients into 3 mm by 3 cm long strips and place in a bowl. Whisk together all ingredients for the vinaigrette and pour over the salad. Gently mix everything together. Serve on Boston lettuce or your favorite greens and with crusty bread.

  5. Oh, I hate having to julienne a bunch of things, but looking at this salad, it would be worth it. Like you, I have plenty of zucchini so I'll have to give this a try.
