8-9 slices of bacon, halved
4-5 skinless, boneless chicken thighs
salt and black pepper1 baguette, halved horizontally
5-6 leaves Boston lettuce (or other)
2 medium tomatoes, sliced
1/2 - 3/4 avocado, sliced
In a large skillet over medium heat, cook the bacon in badges until crisp and browned. Let drain on paper towels. Meanwhile, pound the chicken to about 1/8 inch thick. Pour all but 1-2 tsp bacon fat out of the pan. Cook chicken over medium-high heat until golden brown, about 2-3 minutes per side. Remove from the skillet and let cool. Generously season with salt and pepper from both sides. To assemble sandwich, spread baguette with mayonnaise. Place lettuce on bottom half of bread, the top with tomatoes, chicken, bacon, and avocado. Place top half of bread onto avocado layer. Carefully, and with a sharp bread knive, cut baguette into 4-6 pieces.
