Avocado Peach Salad with Red Bell Pepper Vinaigrette

Here is another one of my beloved summer salads. This one is based on a recipe from Bon Appetit. I just added some more veggies, ham, and cheese to make it a full meal, rather than a side salad. I really liked the bell pepper dressing, rather than adding red bell pepper to the salad. Pureeing the pepper intensified its flavor. I thought of adding olives to the salad but I wasn't sure if it would blend in with the peaches. 

Ingredients (for 1 Person):
1-2 oz mixed greens
1/4 avocado, sliced
1/2 peach, sliced
5 cm piece of cucumber, coarsely chopped
4 yellow cherry tomatoes, quartered
1 - 1/2 sliced of mozzarella, cut into 1/4 inch by 1 inch strips
1 slice ham, cut into 1/4 inch by 1 inch strips

vinaigrette (enough for 4 servings)
2/3 red pepper, coarsely chopped
2 1/2 tbsp red wine vinegar
1/2 tsp vanilla extract
1/2 tsp sugar
1/4 olive oil

Arrange all ingredients for the salad on a plate. For the vinagrette, place all ingredients in a blender and puree until smooth. Drizzle over salad. Serve with crusty artisan bread.
