Vacation Pasta I: Mini-Rotelle Pasta with Yellow Bell Pepper, Ham, and Gorgonzola

When we go on vacation, we usually rent a cottage or appartment. We like to have a kitchen and not having to go out for every single meal, 3 times a day. We usually have breakfast "at home" and then either do take-out food for dinner or I cook a simple pasta dish. This and the following recipe are the two simple and quick pasta dishes I prepared during this year's vacation.



Ingredients:
6-7 oz Mini-Rotelle pasta
1-2 tbsp olive oil
1 small onion, minced
1 yellow pepper, cut into 1/4" by 1" strips
1-2 tbsp Italian herbs
4 oz rosemary ham, coarsely chopped
12 stuffed green olives, quartered lengthwise
salt, pepper
3 oz crumbled gorgonzola

Prepare pasta as per instructions. Drain, reserving about 1/2 cup of pasta water. Heat oil in skillet over medium heat. Add the onion and fry until translucent and soft, about 8-10 minutes. Add pepper and herbs and fry for another 3-4 minutes. The pepper should still have some bite when you serve the pasta. Mix in ham and olives, and season to taste with salt and pepper. Add pasta and cheese and some of the reserved pasta water according to taste. Serve with a side of fresh tomato salad.
